Grease brinjal and put it on low flame to get it roasted, move it in between to get it roasted evenly.It will take 4 to 5 minutes, allow it to cool down and peel the skin and keep it aside.

Put a kadai on flame add oil then put ginger garlic and cumin seeds and then put chopped onion and cook for two minutes then add chopped tomatoes and cook it on for five minutes then add coriander powder and red chilli powder and stir it then add mashed brinjal, put salt and green chilli, cover the lid and cook it for some time.

Now cook openly for two minutes and Baigan ka Bharta is ready, garnish it with fresh coriander leaves and serve it with chapati, paratha or Naan, it goes well with rice and dal also.
