First, in a pot on the stove, combine the sugar and 1/4 cup water. Bring to a boil. Add a pinch of red or yellow food coloring, 2 to 3 tablespoons rose water, and cardamom powder. Let the syrup simmer on low heat for 2 to 3 minutes. Once the syrup is ready, cover and set aside. Turn off the heat.

In a bowl, mix the chickpea flour with a pinch of red food coloring and water to make a thin batter. Heat oil in a deep pan over the stove. Once hot, lower the heat. Using a slotted spoon, pour the batter through the spoon into the oil to make small droplets (boondi). Fry for 15 to 20 seconds, then remove with a strainer and add directly to the syrup. Repeat with the remaining batter, adding all the boondi to the syrup. Cover and let soak for 20 minutes.

After 20 minutes, gently press and shape the mixture into small or large balls, as you like. Your motichoor ladoos are ready to serve.
