One of my favourite ways to go out of the box. Love it in sandwiches and burgers.

For flavouring, I prefer to cook a flavour base in advance. You can use any aromatic veggie you like. For me I fry spring onions, dhania, carrots and green capsicum together in garlic oil (sometimes adding chili) then add Simba Mbili curry powder and salt. I also love cumin. Make sure it is cooled.

Mix all the ingredients except the oil and white flour.

If the mixture is too wet, add some white flour to make it more solid.

Smear the oil on a baking tray and put your meatloaf in it.

Put in the oven at low heat for around an hour.

When it's ready, let it cool, slice, and cook in hot oil in a pan to get crunchy sides, which will make it much more delicious.

Serve with gravy or in sandwiches. I used mine in sandwiches.
