Slice the onion into about 1 cm slices

In a bowl add onions separated - you dont use the small bits in the middle (I chop and using in sauces) sprinkle in the corn flour and toss to coat.

In a bowl or Jug put the flour, salt and pepper and baking soda. Then add beer and mix - you want a medium thick batter.

Heat oil to 190c (yes slightly higher that normal fry temp but this goes quickly)

Take an onion ring dip into batter and then careful lower into oil, Repeat with all rings - but dont over crowd pan, you can do 2 or 3 batches. Fry for 3-4 mins turning a few times so even frying.

Remove with a frying "Spider" to kitchen paper and Serve hot - WOW these are good - Enjoy :P
