Bread and butter pudding

This recipe is one I have used for years out of 'my little big cook book' and it goes under the name of poor man's cake. It's my recipe for whenever I have a lot of bread that may go stale or too much milk I want to use up quickly.

Soak raisins in the rum for about 30 minutes

Bring milk to a boil. Add butter and sugar.

Soak bread with the hot milk mixture for about half hour
- 4
Heat oven to 180 C and grease 25cm spring form. Sprinkle with dried fine breadcrumbs
- 5
Drain raisins and add to the bread and milk. Add the eggs to mixture
- 6
Pour mixture into spring form and bake until golden at 180C for about 30 minutes
