Ingredients

  1. 3-3.5 lbsbone-in chicken thighs or drumsticks
  2. 1 tbsppoppy seeds
  3. 1-1.5 tbspcumin seeds
  4. 1-1.5 tbspcoriander seeds
  5. 2-3 piecesdried cloves
  6. 1 handfulraw cashews
  7. 3-4dried red chiles
  8. 2-3slivers of cinnamon bark
  9. Any non-olive oil
  10. 3-4tomatoes, diced
  11. 2-3onions, diced
  12. 2-3 tbspginger paste
  13. 1-2 tbspminced garlic
  14. to tasteSalt

Steps

  1. 1

    Add poppy, cumin, coriander, cloves, cashews, chiles and cinnamon to a pan and roast on medium-low heat until the cashews brown and the seasoning becomes aromatic. Take off heat and let cool.

    Grind in small batches until smooth.

  3. 3

    Heat oil in large saucepan over medium heat. Incorporate curry in spoonfuls and stir until a dark brown paste forms.

  4. 4

    Add onions, ginger, garlic, and salt.

  5. 5

    Once browned, add tomatoes and more salt.

  6. 6

    Add chicken and cook until outside of chicken is browned.

  7. 7

    Cover chicken with water and let cook for several (at least 4) hours. Stir occasionally and water if necessary.

  8. 8

    Serve with yogurt and cilantro.
