Roasted Capsicum-Corn Soup

Roast green capsicum on open medium flame. Till its outer skin blackened.

Put it in cold water. Scrap out blackened skin from roasted capsicum. Chopped it into small pieces.

Boiled sweetcorn without salt. Strain and keep its stock aside. Blend boiled sweetcorn, milk with 1 cup of veg stock.

In pan add, melt butter. Add chopped onion and saute for 30 seconds. Add chopped capsicum saute for 2-3 minutes.

Mix cornflour with 1/2 cup of veg stock. Add blended corn+ milk mixture to sauted onion capsicum mixture. Add corn flour water to soup. Add salt to taste. Boil for 5 minutes till soup thickens.

Pour in soup bowls. Sprinkle pepper powder to taste. Serve/ Sip Hot Roasted Capsicum-Corn Soup.
