  2. 12 oz. (340 grams)your favorite fish
  3. seasoning
  4. 2garlic cloves
  5. 1/2 teaspoondried oregano
  6. 1 teaspoonsalt
  7. 1/4 teaspoonground black pepper
  8. ingredients for breading the fish
  9. 1/4 cupall-purpose flour (about 30 grams)
  10. 1beaten egg
  11. 1 cuppanko breadcrumbs (about 50 grams)
  12. ingredients for the sandwich filling
  13. Jon’s Dressing (see recipe)
  14. leavesLettuce
  15. 1tomato, thinly sliced
  16. 1/2onion, sliced into rings
  17. Fried fish
  18. ingredients for the bread dough
  19. 4 cupsall-purpose flour (about 500 grams)
  20. 3 1/2 tablespoonsbutter, at room temperature (50 grams)
  21. 2 tablespoonssugar (25 grams)
  22. 1 tablespooninstant dry yeast
  23. 1 cupplus 1 tablespoon warm water (250 ml)
  24. 2 tablespoonsmilk (30 ml)
  25. 3/4 teaspoonsalt
  26. 1beaten egg
  27. jon’s dressing
  28. 2/3 cupmayonnaise (about 160 grams)
  29. 1 teaspoonmustard of your choice
  30. 1 tablespooncapers
  31. 2 tablespoonsgreen onions, thinly sliced
  32. 2 tablespoonsred bell pepper, finely diced
  33. 2 tablespoonspickles, finely diced
  34. 1 tablespoonchopped cilantro

Steps

  1. 1

    Method FOR MAKING THE BREAD
    Instant dry yeast doesn’t need to be dissolved in liquid first; you can mix it directly into the flour with the other ingredients.
    Work the butter into the flour with your fingers.
    Add and mix in the rest of the ingredients except the egg. After mixing well, knead for about 15 minutes. Shape into a ball, place in a bowl, and cover with a towel. Let rise until doubled in size, about 90 minutes.

    Flatten the dough and place it on a baking sheet lightly dusted with flour. Cover gently with plastic wrap and let rise for about 1 hour.
    Brush the top of the bread with the beaten egg.
    Preheat the oven to 450°F (232°C).
    Bake the bread for about 18 minutes, until golden brown.

    MAKE THE DRESSING
    Measure and prepare the dressing ingredients.
    In a small bowl, mix all the dressing ingredients together and refrigerate until ready to use.

    BREAD AND FRY THE FISH
    Cut the fish into strips.
    Season the fish with chopped garlic, oregano, salt, and pepper, and let it rest for 20 minutes.
    To bread, coat the fish strips in flour, then in beaten egg, and finally in panko breadcrumbs.
    Tip: Let the breaded fish rest for about 30 minutes so the panko sticks well and doesn’t fall off during frying or burn the oil.
    Heat the oil well and fry until golden brown.

    ASSEMBLE THE SANDWICH
    Use a serrated knife to slice the bread rolls in half lengthwise and spread the dressing on both cut sides.

    Layer lettuce and tomato slices on the bottom half of the bread.

    Add onion rings seasoned with salt, olive oil, and wine vinegar, then top with the fried fish strips.
    Cover with the top half of the bread and insert a few toothpicks to hold the sandwich together.
    Cut in half and serve on a plate with your favorite side.
