Ingredients

  • 1/2 cupbutter
  • 1 cupsugar
  • 4eggs
  • 1/4 cupoil
  • Zest and juice of 1 small orange
  • 2 cupsflour
  • 2 tspbaking powder
  • 1 cupbuttermilk

Steps

  1. 1

    Preheat oven to 175°C and prepare your baking tin

  2. 2

    Mix and sift the flour with baking powder and set aside.

  3. 3

    Cream butter and sugar till light and fluffy. Add oil bit by bit and continue mixing

    Add eggs one at a time and continue beating. Add in the zest and juice and mix well

    Add flour alternating with the buttermilk

  6. 6

    Pour batter into two 8" baking tins and bake till toothpick inserted in the centre comes out clean

I discovered my love for cooking a few years ago. Since eating out is expensive i figured i had some learning to do. Living in a very small town(i doubt it can even be called that) where you cant always find what you wanted also pushed me towards doing it on my own. I am Zimbabwean by the way.I think the internet is the best invention ever since i can look up recipes, try and modify them to suit my preferences. I love sampling dishes from different countries and of course stories behind them

I've had a couple of cakes where the top has almost burnt too, I find a good trick is to pop some tin foil over it once it reaches the desired colour on top 😍
