Turkish Adana Kebabs

Adana Kebab is a long, hand minced meat kebab mounted on a skewer and grilled on a barbecue with burning charcoals. It is named so after the fourth largest city of Turkey. It is basically 60% Beef and 40% fat. But here I have used Mutton Mince. And these Kebabs by me are made on a Stovetop Griller and not done on a barbecue. Yet the results were awesome and as you all can see, the final look of these lipsmacking Kebabs is a proof of that. They just melt in your mouth and has an absolutely delightful texture. The ingredients used are also very easily available except for Sumac which is a herb available abundantly in the Middle East and used extensively in all the exquisite Kebabs made there. It has a tangy flavour similar to that of a Lemon. And is a bright pinkish coloured herb. A must try recipe of Kebabs for you all Kebab lovers out there. Happy Cooking Everyone!

First of all, blend all the ingredients mentioned to a fine paste. Add this to the ground meat and mix well. Refrigerate overnight for best results. Next day, grill them for 12 minutes.

But I shallow fried them right in my kitchen and they tasted equally yum. Serve them with Onion rings and Lemon wedges.

These are made on a low heat. Baste with Olive Oil as required. Serve them piping hot with Naans. Enjoy!
