Ingredients

  1. 500 gpotato, cut 1 am thin
  2. 60 mlolive oil
  3. 1thinly sliced onion
  4. 2 tbspchopped parsley
  5. 6eggs
  6. Salt and pepper to taste

Cooking Instructions

    Boil potatoes: start with cold water, once it boils, leave for about 5 minutes. Drain and set aside.

    In frying pan heat the oil and fry onion for 5 minutes or until soft.

    Add potato and parsley. Cook for 5 more minutes. Salt and pepper to taste.

    Whisk the eggs with salt and pepper. Add eggs in pan, cover with a lid and cook on very low heat for about 10 to 15 minutes. Enjoy!
