This time, we wanted to treat my customers, so we set out to make some pineapple empanadas 🥟🍍.

First, mix the shortening with the sugar and the egg.

Gradually add the flour and knead until everything is combined. Once all the flour is incorporated, slowly add the cola. Make sure the dough is not sticky but still easy to handle. Wrap the dough in plastic wrap and let it rest for about 20 minutes.

After resting, divide the dough into small balls. Roll each one out, fill with pineapple jam, and fold to close. Brush the edges with a little egg to seal, then press the edges with a fork or an empanada press. Poke the top with a fork to let steam escape and prevent them from bursting. Brush with egg if you like.

Bake at 350°F (180°C) for about 25 minutes. While still warm, roll in a mixture of sugar and a little cinnamon. Enjoy!
