Chop down cashews, almonds, walnuts, and dates. Thinly slice pistchios.

Pour some ghee in a hot wok. When ghee melts, roast the cashews, almonds, and walnuts in a wok for 2-3 minutes on medium flame.

Pour some ghee in a wok and then roast the finely chopped dates.

Dry roast the poppy seeds for 2 minutes on low flame while constantly stirring.

Once poppy seeds become fragrant, add dates, roasted dry fruits, and elaichi powder to it. Keep the flame on low and mix all the ingredients thoroughly. Then turn off the flame and transfer the mixture to a plate so it cools down quickly.

Pinch some mixture with greased hand and roll it into a long log. Coat the long log with poppy seeds and some pistachios. Wrap the logs with aluminium foil and refrigerate for 2 hours.

Then unrap the logs and cut the logs into 1/2 cm thick burfi chunks and place them on a plate.

Khajur roll is now ready to serve.

TO MAKE KHAJUR KATORI: Take some amount of khajur and dry fruit mixture and roll it in puri shape then add condensed milk and mixed with some dry fruits.

Then wrap it up properly in the shape of katori. Then decorate it using silver foil. Now your khajur katori is ready to serve.
