Baked pasta cups

Crunchy bread cups; laden with creamy veg pasta. Topped with mozzarella cheese and baked to perfection. These are crispy and crunchy on the outside with a creamy pasta filling on the inside and topped with stringy, molten mozzarella cheese. Normally pasta is made in cheese sauce, however in case cheese is not available you can easily replace it with mayonnaise and enjoy an equally creamy pasta. In this recipe I have used Mayonnaise to create a thick creamy sauce for pasta.

Ingredients

makes 9 servings
  • For the Pasta
  • 1/4 cuppasta (any small shape, I am using macaroni)
  • 1 tbspbutter
  • 1 tbspchopped garlic
  • 1/4 cupchopped onion
  • 1/4 cupfinely chopped capsicum
  • 1/4 cupchopped red bell pepper
  • 1/4 cupboiled sweetcorn kernels
  • 1/2 tspsalt or to taste
  • 1/2 tspblack pepper powder or to taste
  • 1/2 tspmixed herbs
  • 1/4 tspred chilli flakes
  • 3-4 tbspmayonnaise
  • 2-3 tbspmilk
  • For the baked cups
  • 9bread slices
  • 3-4 tbspbutter or oil
  • 1/2 cupgrated mozzarella cheese
  • For Garnish
  • as requiredveggies of your choice
  • as required mixed herbs to sprinkle
  • asred chilli flakes to sprinkle
  • as required basil leaves some

Steps

  1. 1

    To make baked pasta cups, first boil 2-3 cups of water with some oil and salt.

    Add 1/4 cup of pasta to boiled water and cook till al-dente or done with a little bite. I have used macaroni it took around 7 minutes to cook. Drain and keep aside.

    Heat butter in a pan or kadai. Add chopped garlic saute for 10 seconds, now add finely chopped onion and saute for 30 seconds.

    Now add chopped capsicum, bell pepper and boiled sweet corn. cook for 1-2 minutes. no need to make the vegetables soft as they will be cooked again in the oven. Add salt, black pepper, mixed herbs and red chili flakes. mix well.

    Its time to add boiled pasta and mayonnaise. Also add milk. Mix well. Now you can eat this pasta as it is, just add some more milk to get a sauce with a loose consistency. But we have to fill this pasta in cups so we will keep it thick.

    For the cups, take 9 bread slices and cut them in a round shape using a round cutter or a bowl (katori). Using a rolling pin, roll out the round bread slice to make it softer.

    Pre heat a oven to 180 degree celcius. Take a muffin tray grease it very nicely. Now place the slices on the muffin cavity and press it inside gently using your fingers to make a small cup. Brush the bread cups with some butter or oil. Bake the bread cups in the oven for 3-4 minutes.

    Carefully take out the muffin tray and add spoon full of pasta mixture in each bread cup. Top up generously with grated cheese. Sprinkle with mixed herbs and chilli flakes.

    Garnish with vegetables of your choice and bake in the oven for 10 minutes till the edges of the bread cup are golden and crisp and the cheese is melted.

    Serve the yummy and delicious baked bread cups while still hot.
