Apricot contains vitamin-C, vitamin A, vitamin E, potassium, magnesium etc.
I made chutney by dry apricots.
You can also eat it in the fasting time.

Steps

Soak Apricot in the water for 4 to 5 hours or boil Apricot in 2 cups of water for 30 minutes on low flame.
keep it aside. - 2
When it cools,Take out its seeds
and blend it in a mixer. - 3
Now put pan on medium flame, add oil to it.
When Oil becomes hot add Cumin Seeds. - 4
When Cumin Seeds are light brown in color,now add Chilli Flakes and after 15 seconds add Apricot Puree.

Then reduce the flame of the gas.
Now add Red Chilli Powder, Roasted Cumin Powder, Dry Mango Powder, Salt, Jaggery powder and Water. - 6
When the chutney starts to thicken. now add Dry Ginger Powder.

Then Switch off the Gas.
(Keep in mind that chutney will get thick after cooling.)
Apricot Chutney is ready.
