Kachche haldi ka achar fresh turmeric pickle
It is healthy and tasty.
Steps

Rinse the turmeric and dry it completely.

Peel off it. Finely chopped or grate it and keep aside.

Dry roast fenugreek seeds and fennel seeds for 2 to 3 minutes.

Remove from the pan and keep aside. Allow it to cool.

In same pan add mustard seeds and roast for 2 minutes. Remove from the pan and allow it to cool down completely.

Make a coarse powder of methi seeds and fennel seeds. Remove from the pot and keep it aside.

Then make a coarse powder of mustard seeds.

Take clean plate and make a layer of all above ingredients starting with salt, mustard powder, red chilli powder, turmeric powder, fennel and fenugreek seeds powder, salt and sugar.

Heat the oil in a pan on low medium flame upto boiling point. Switch off the gas. Allow it to rest for 5 minutes.

Then add oil in the layer starting with centre. Mix the oil with masala well. Now the pickle masala is ready. Let it cool down completely.

Then mix finely chopped fresh turmeric and lemon juice in masala. Mix well.

Haldi ka achar is ready to it. Store it in clean and dry glass jar. It taste great after 2 to 3 days.
