  1. 1daikon radish
  2. 1 1/3 lbspork loin (about 600 grams)
  3. 5 slicesginger
  4. 3green onions
  5. 1 cupwater (240 ml)
  6. [Seasonings]
  7. 4 tablespoonssoy sauce (60 ml)
  8. 2 tablespoonsrice wine (30 ml)
  9. 2 tablespoonsmirin (30 ml)
  10. 1 tablespoonrock sugar

    Prepare all ingredients and seasonings.

    Peel the daikon radish (about 1.4 lbs/628 grams) and cut into chunks. Peel and slice the ginger. Chop the green onions.

    Cut the pork loin into chunks.

    Heat a cast iron pot over medium heat and add 1 tablespoon vegetable oil. Add the pork and stir-fry until partially cooked and no longer pink.

    Add the ginger slices to the pot.

    Add the daikon radish to the pot and stir-fry with the pork.

    Add all the seasonings and water to the pot. Bring to a boil, cover, and simmer over medium-low heat.

    Simmer until the daikon and pork are fully cooked and tender.

    Before serving, sprinkle with chopped green onions.
