The Bouquet Garni - a bundle of herbs 🌿

I love herbs and grow lots of interesting varieties in my garden! The Bouquet Garni is a lovely way to flavour soups, stocks, stews and lentils. Traditionally this is used in French cuisine, but I use to add flavour to many different dishes of different cuisines using a lots of varieties - for example a Caribbean, Mediterranean or Thai herb bundle 🌿 Here I’m using to flavour my favourite French onion soup and I use this same bundle to make a stock for lentil vinaigrette (recipe to follow). Wrap with baking twine and remove the herbs prior to serving (helpful when you have someone at home that claims they get all of the ‘bits!). Use a combination of any seasonal herbs. If you don’t have fresh herbs, use dried and wrap into a little cheese cloth bundle and wrap up with baking string. Another alternative is that you can fill and dangle a tea or herb infuser.
Tip 1) I often use this with a combination of lemon, lime, garlic or chilli
Tip 2) you can use leek or spring onion to secure your bundle instead of twine

Method 1) Cut your herbs and wrap the stems in baking twine. Add to your dish at the point if a slow simmer and remove prior to serving.

Method 2) Cut a square of cheese cloth, pop your choice of herbs into the square and knot into a bundle. Pop in the pot as it starts to simmer and remove prior to serving. You can also use a tea infuser.
