Cheesecake Soufflé Made with Processed Cheese

Cream cheese is so expensive So, I always make a cheesecake with processed cheese or sliced cheese that tastes just as good as cheesecakes made with cream cheese.

If you have a blender, you can just blend the flour, cornstarch, soy milk (or milk), sugar, and chopped cheese, then transfer to a pot to quickly finish it up. If making it with sliced cheese, use 4 slices. Recipe by nokko.t

Steps

  1. 1

Prepare your ingredients. Combine the ◎ ingredients and sift. Cut the cheese into small pieces. Separate the egg yolks from the whites. Boil some water for steam baking. Line the cake mold with parchment paper.

  2. 2

Combine the sifted ◎ ingredients and half of the soy milk (or milk) in a pot and mix with a whisk until smooth.

  3. 3

Add the remaining soy milk, the cheese, and sugar. Turn the heat on to low and mix with a whisk. Once thickened, turn off the heat. Keep mixing to melt the cheese on residual heat.

  4. 4

If you have a blender, you can use it to mix up the soy milk (or milk), sifted dry ingredients, sugar, and chopped cheese. It is even quicker than using a pot.

  5. 5

Once the cheese has melted, add the egg yolks and butter and mix. Preheat the oven to 160°C.

  6. 6

Add the sugar to the egg whites and use an electric mixer to beat well to make the meringue. Add the lemon juice midway through.

  7. 7

Add 1/3 of the meringue to the pot from Step 5 and mix with the electric mixer until smooth.

  8. 8

Transfer the batter to a bowl, add half of the remaining meringue, and use a rubber spatula to mix using cutting motions, scraping the bottom of the bowl. (If using a large pot, you don't have to transfer to a bowl.)

  9. 9

Add the remaining meringue and mix without forming bubbles.

  10. 10

Pour the batter into the cake mold and put into the oven with the hot water. Steam bake for 60 minutes. Adjust the baking time as needed. It is ready when a toothpick or skewer inserted in the center comes out clean.

  11. 11

Once baked, let cool and chill well in the refrigerator. If you like, topping with jam mixed with a small amount of water is delicious.

If using sliced cheese, it's delicious when made with 4 slices.
