2flour tortillas
as neededSmoked cheese, thinly sliced,
4-5thin slices of artisanal quince paste

Heat the tortillas on a skillet or griddle until they start to puff up.

Place half of the smoked cheese on one of the tortillas.

Add the quince paste on top, then the rest of the cheese, and cover with the second tortilla.

Heat on the skillet or griddle, flipping, until golden on both sides and the cheese is melted.

Cut into 6 triangles.

Serve with your favorite mezcal! Enjoy!
