Christmas Plum Cake (Eggless, Whole Wheat, No Alcohol)

This cake is traditionally made for Christmas, but it's so tasty and healthy that you can enjoy it anytime with tea or coffee. I made it with whole wheat flour and lots of mixed dried fruits, and I didn't use any alcohol. It also includes some warming spices that are especially beneficial in winter.

First, soak all the chopped dried fruits in 1 cup of orange juice for at least 2-3 hours. Note: You can use almonds, cashews, raisins, walnuts, dried berries, or any dried fruits you have.

In a large bowl, combine the butter, oil, brown sugar, and the soaked dried fruits mixture. Mix well.

Sift in the whole wheat flour, cocoa powder, baking powder, and baking soda to remove any lumps and to aerate the mixture.

Add all the spices and gently fold them into the batter. If needed, add more juice a little at a time.

Make sure the batter is thick. If it's too thin, the dried fruits will sink to the bottom of the pan.

Keep the batter thick so the dried fruits are evenly distributed. Pour the prepared batter into a greased cake pan and tap gently to spread it evenly.

Sprinkle some extra chopped cashews, walnuts, or your favorite dried fruits on top. Bake the cake in a preheated oven at 340°F (170°C) for 45-50 minutes.

After 45 minutes, insert a toothpick to check. If it comes out clean, the cake is done. If not, bake for another 5 minutes.

You can also bake this cake in a heavy-bottomed pan (kadhai). Add salt to the bottom, place a stand, and preheat on medium heat for 10 minutes. Place the cake pan on the stand, cover, and bake on medium heat for 10 minutes, then reduce to low heat and bake for another 30-40 minutes. Your cake is ready.

Note: Once the cake is baked, let it cool in the pan for 10 minutes. Run a knife around the edges, invert onto a wire rack, and let it cool completely covered with a cloth.
