I wanted just one more easy dish! I had eggplant in the refrigerator, so I made this and it was delicious.
Heat the eggplant until soft and wilted.

Cooking Instructions

Combine the ● ingredients in a dish.

Cut the eggplant lengthwise into 2 or three pieces and cut into easy-to-eat pieces. Cut the green onions in the same way.

Wrap with plastic wrap and heat in the microwave until wilted (3-4 minutes). Marinate in Step 1's marinade and mix until evenly coated.

Once cooled, chill in the refrigerator and serve.

I used this fat eggplant. If you use a thin eggplant, I suggest using a few.

It's sweet, spicy, umami, garlicky, and balanced.You can also use this marinade/sauce for tofu, dumplings, or even noodles!The base of my sauce recipe is perfectly balanced, I would just change the ratio of jalapeños/peppers used depending on your spice tolerance!
