Chunky Cheese Muffins

My kids and I love cheese, so we added lots.
I was a bit worried about using mayonnaise instead of butter, but it turned out great. You can hardly taste the mayonnaise.
The cheese mixed into the batter will melt, but the cheese topping will keep its shape.

Dice the cheese to 1 cm pieces.

Put the mayonnaise and sugar into a bowl and mix well with a whisk. Mix in the egg, then add the yoghurt and mix some more.

Sift the flour and baking powder into Step 2. Mix in the cheese (keep some aside for decorating), and use a rubber spatula to mix in a cutting motion.

Line the mould with muffin cups and pour in the batter. Top with the leftover cheese.

Bake for 25-30 minutes in an oven preheated to 180ºC, and they're done. Adjust the baking time according to your oven.
