Add about one and half tablespoon of veg oil to a pan. Break egg and add pinch of salt and black pepper. Scramble egg and set aside

In the same pan add about three to four tablespoon of oil, add onion, scotch bonnet, seasoning, garlic and ginger paste. Sauté for two minutes

Add grated carrot and cubed sausage and parboiled peas for two mins. Add curry, thyme. And the soy sauce

Add parboiled rice and stir well. Making sure everything is well mixed

And tadaaa!!! Your rice is ready
