This is the cream I made for a child that couldn't eat custard cream due to allergies.
It will harden after cooling down. The key is to remove it from heat before it reaches your desired consistency. I always use sweetened soy milk. Recipe by mitsu-mitsu

This is the cream I made for a child that couldn't eat custard cream due to allergies.

Put the sugar and cornstarch in a sauce pan.

Blend them together with a whisk. This is to save the trouble of sifting the ingredients to prevent lumps from forming.

Pour in a bit of the soy milk and mix well. Add the honey and vanilla extract and continue mixing.

Add more soy milk, a little at a time.

Once all of the soy milk has been added, heat on the stove top. Set on low heat while mixing with a whisk. Remove from heat while it is still on the runny side.

Pour it into a tray, and wrap it in plastic wrap until you use it.
