Nothing can beat the traditional. Daal is good source of protein and good option for light dinner.
Steps

Soak the daal for an hour. Once it is soaked, boil it.

Keep chopped garlic, green chilies, and tomato ready. Take a pan. Add oil. Once the oil is hot add jeera and asafoetida. Add chopped garlic.

Add chopped green chilies and tomato. Add tomato, salt, and turmeric. Mix it well and cook it on low flame.

Add boiled daal. Once it is boiled, add chopped coriander leaves. Cook for some more time.

Take another pan. Add oil. Once the oil is hot, switch off the flame. Add red chili powder to daal. Pour the hot oil on the top of red chili powder. Just make sure that you don't burn red chili otherwise daal will be brown in color. Cook for some more time. Serve hot with Roti or Paratha.
