Just Mix and Bake Basic Plain Muffins

I love scones, but I was wondering about the difference between scones and muffins. That's how I came up with this recipe.

Cooking Instructions

Put all ◆ ingredients into a bowl and whisk. Preheat the oven to 180℃.

Put the margarine into a separate bowl and mix until white (refer to Steps 8 to 10 ).

Add sugar into the margarine and mix well.

Add the egg in small batches and mix thoroughly.

Then add the combined ◆ ingredients. Mix lightly in a cutting motion.

Now add the milk in small batches. Bring the batter together.

Pour into the muffin pan and bake for 25 to 30 minutes at 180℃.

Easy Tips to Mix Hard Margarine or Butter: Refer to Steps 9 and 10. It's easier if you do the opposite from warming the bowl in a hot bath.

Begin by melting about half of the listed amount in a microwave. Mix well with a whisk until evenly combined.

Chill the bowl over cold (or iced) water as you mix. Remove the bowl when the butter or margarine is fairly hard. Keep on whipping.

Variation 1: I've added bananas. It was so sweet and moist that my kids loved it.

Variation 2: This is a blueberry version. Fresh blueberries... so tart.

Variation 3: Here are milk tea muffins. I substituted milk with milk tea, and also mixed in black tea leaves. Smells good.

Variation 4: I put 20 g sugar and a little water in a heatproof container and microwaved until golden brown. Then I mixed in 10 g butter and bananas to bake.
