To start our recipe, take the pork shanks and rub them well with fine salt. This is an important step to ensure a crispy skin! Make a few incisions on each side of the shank with a knife.

Peel the onion, garlic, and carrots and cut them into thin pieces. Place the shanks vertically in a dish and add the vegetables.

Pour in about 1 cup of broth and add the beer. Add the bay leaves and bake for 2 1/2 hours at 300°F, then for 15 minutes on the grill setting at 480°F.
