Dum Aloo
Dum Aloo-A special Kashmiri dish for the New Year.
Steps

Boil the potatoes in the pressure cook till 4 whistles on high flame and let it be in pressure for some time.

Take out the potatoes from the cooker, peel them and make holes in them with a fork.

Now in a pan heat some oil for deep frying and dip fry the potatoes. Deep fry them on medium heat so that they are cooked inside out. Fry them till golden brown and them take them out in a plate and keep aside.

In separate pan add a little oil and when its get heated add jeera to it, when it starts crackling add the whole masalas.. big and small elachi, tej patta, cloves, dalchini.stir it for a minute then to it add ginger garlic paste..Stir again. Till the raw smell of the ginger garlic paste is gone

To it now add chopped onions and cook the onions till they turn golden brown.

Now àdd chopped tomatoes and cook for a minute and add salt and chilli powder to taste. Cook for a minute. If required add a little water at this point. Cook again till the gravy becomes thick

Now in a bowl take some curd to it add ginger powder and saunf powder and mix well. Add This to the gravy, stirring constantly, so that the curd doesn't cuddle.

Now add the fried potatoes to the gravy, and le it simmer for five minutes on low flame.After five minutes, if you want to add some water to the gravy, you ca at rhis point and let it simmer on low flame for another 5 minutes. Garnish with coriander leaves and serve hot
