Gajar Ka Halwa is one such Dessert that no Indian can miss in Winters. Although it's available in every Sweetmeat shop, the homemade is always the best because it's made with lots of love. It's absolutely pure. And in this particular quicker version, I had pressure cooked them and have used Condensed Milk along with some full fat Milk and both Musk Melon and Watermelon Seeds without any other Dry Fruits for a change and this turned out just awesome.
And on top of that it's cooked so quickly. It's always better to sometimes get it ready super quick with an alternative method as no one has that patience to wait for it for so long. The craving for this super delicious and tempting Indian Dessert is such that one cannot wait for a long time. That's what exactly I have done here this time to reduce it's cooking time. And not only that, with no dry fruits and nuts, this is one amazing innovative twist by me. Watermelon and Muskmelon seeds have added that perfect crunch to every juicy bite that one would love to dig in.

Peel carrots at first. Chop them to pieces and add to a pressure cooker. Also add milk and condensed milk both.

Pressure cook for 7-8 whistles. After the pressure settles down, open the lid and using a masher, mash it well. Add ghee, cardamom powder and the melon as well as watermelon seeds.

On a high heat, roast it well and the best part is that it gets done so very quickly. That's it. Serve it warm or cold as desired.
