Mel’s Pansit Bihon

Steps
- 1
Boil some water and pour in the glass vermicelli to soften them for a 10-15 minutes. Set aside and start sautéing.
- 2
Sauté onions, garlic and ginger.
- 3
Add chicken thighs and cooked until brown and tender.
- 4
Add the chopped and sliced celery and carrots. Cooked for a few minutes then add the glass noodles to the pan and lower the heat then stir gently and occasionally. Then add some ground black pepper.
- 5
Finally, add the chopped cabbage and then the prawns and cooked together until colour has changed and it’s cooked. (myself, I used lettuce as I cooked whatever ingredients I have left in the fridge - waste not... - but really cabbage should be used).
- 6
Switch off heat and garnished with spring onions and stir gently. Set its aside for 10 minutes (so the noodles was soaked throughout and flavour all mixed).
- 7
Enjoy it a splash of lemon juice. Xx
