Cheese Jacket Potato
Steps

First, wash and boil the potato in a pressure cooker for 1 or 2 whistles. Cool down and peel them and cut into two pieces as shown. (Choose to take long and big potatoes).

Secondly, scoop the potatoes from centre and deep fry in a pan(kadhai) till it becomes golden brown colour. Fry it from both the sides and put on tissue paper to absorb extra oil.

Now prepare stuffing/ filling of these jacket potatoes. Take all the veggies as given in the ingredients list. Veggies may vary according to need, choice, or availability. Wash and roughly cut and grind in a jar and place oil in a pan and add cumin and sesame seeds and saute all the veggies crush in it.

Now cook it for 4-5 mins on medium flame and add chopped spinach and spices and keep it aside for cool down. After cool down add salt and chopped coriander leaves too.

Now take fried potatoes and fill little cheese.

Now fill the stuffing and again spread some grated cheese and bake it in the preheated oven or otg for 10 mins on 200° temperature until cheese become melt and crisp.

Now cheese Jacket Potato is ready, serve it with tomato ketchup and cheese sauce dip as you like.
