Ingredients

20 min + resting of the dough
2 servings
  • For the pasta dough
  • 100 gsemolina flour
  • Water as required
  • 1 pinchsalt
  • For the arrabiata sauce
  • 1/2banana shallot finely chopped
  • 200 mlpassata (preferred) - if not available 5 fresh plum tomatoes chopped
  • 1/2 tspchilli flakes
  • 2 tbspolive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese to serve - vegan alternative - optional

Steps

20 min + resting of the dough
  1. 1

    Make your pasta dough by mixing all ingredients together in a smooth playable dough and let rest for about 20 minutes while we make the sauce.

  2. 2

    In a frying pan, add the olive oil and the shallot and soften. Add the chilly flakes and the passata and let simmer on a low heat until slightly reduced. Season with salt and pepper as desired.

  3. 3

    Shape your pasta dough to your preferred shape and cook in a pot of boiling water for about 2 minutes. Add to the sauce and coat the pasta. Serve with your preferred grated cheese.

They look amazing. How do you incorporate the basil leaves? Just chop them and add to the dough while you make it?
