Pure simplicity and so delicious. This pasta dish couldn't be easier to make, and it'll have you wanting to go back for more. Here smoked sea salt is used to add a subtle smokey flavour to the pasta, almost giving the illusion of having a smoked meat present. Rich egg yolks and butter with parmesan coat the spaghetti strands in a rich glistening sauce. Beautiful.

2 tbspunsalted butter,
Plenty grated parmesan cheese,
2egg yolks,
1/2 tspgarlic paste,
2 tbsppasta water,
Smoked sea salt and cracked black pepper to season
To finish:
More grated parmesan
Smoked sea salt and ground black pepper to season

Cook the pasta according to packet instructions and drain off, but reserve around 2 tbsp of the pasta water inside the pan. With the spaghetti and pasta water in the pan add in the butter and the garlic. Stir through until it's melted completely and coating the pasta.

Season the spaghetti well with the smoked salt and some cracked black pepper. Grate in a generous amount of parmesan (around 4 tbsp worth). Stir through the warm pasta. Next add in the yolks and working quickly mix through until it coats the strands in a glistening sauce.

Serve up immediately and grate over a little more cheese and season again with smoked salt and pepper to taste. Enjoy. Perfect with a chilled glass of white wine. :)
