My Colourful tasty Omelette

This turned out so lovely with the toppings being separate you could have different tastes cutting one part with the red onion or the part with the spring onion I really enjoyed it. Also the squeezing lemon over it ..wow really tingled your taste buds and complimented everything on there. 😄 the only thing is dont put the rocket lettuce on to grill like I did just leave a gap in the middle and add it when cooked. #Lunch #Eattherainbow

Ingredients

5 minutes
1 serving
  • 2Eggs Beaten
  • 1 tblscheese cut into cubes
  • 1 tblsspring onion sliced
  • 1 tblsred sweet pepper diced
  • 1 tblssmall yellow sweet pepper cut into rings
  • 1 tblsdiced red onion diced
  • 2Salad Mushrooms Sliced
  • 3 tblsMilk
  • 1small handful of rocket lettuce
  • 1 slicelemon in half
  • Also a squeeze of Lemon all over
  • Salt
  • Black Cracked Pepper

Steps

5 minutes
  1. 1

    Add the eggs in a jug and whisk then add your salt and pepper

    Add the oil on the pan and then pour on the egg leave to cook for 1 minute then arrange your Veg around the omelette. Then carefully shake to see if the bottom is not sticking.

    Next add the omelettes in the pan under the grill and grill for 2 minutes.

    Take out of the grill and slide it off in one onto the plate. Serve hot.

Cookpad founder Member Ambassador, Also a Cookaholic.I love this Cookpad Site, Recipes, friends, interesting people and outstanding recipes, and able to see and to taste food from all over the world. i have learned so much more here, spices , herbs and lovely recipes of different cultures. also experimenting mixing different herbs and spices and making my own creations .I have cooked for my family since I was 14yrs, home from school as my Grandmother could no longer cook she was 91yrs, my Dad worked and there was only me so I learned quite quick and have always enjoyed it. I only started experimenting with herbs and spices and items I had never heard of before through joining Cookpad 2014 and I'm still learning new things. It is a passion of mine and I always invite my family around so I can create something new for them to try. my children grew up learning lots from me I have 3 daughters all with their own families and two Sons one who cooks for his family also my youngest son who is still at home with me,he comes up with some lovely meals and ideas so I'm proud of them all. 💜
