Ingredients

5 Serves
  1. 1 heaped cupBoondi , plain
  2. 1 1/2 cupsCurd , chilled, beaten till smooth
  3. 1/2 cupWater , chilled
  4. 1/2 cupMilk , chilled OR substitute with water
  5. Salt to taste
  6. 3/4 tspRoasted cumin powder
  7. 1/2-3/4 tspRed chili powder
  8. 1/4 tspBlack salt (optional)
  9. 1 tbspCoriander leaves , finely chopped

  1. 1

    In a bowl, whisk the curd/yogurt till smooth, add the milk, water, black salt, 1/4 tsp red chili powder, 1/4 tsp roasted cumin powder and salt.

  2. 2

    If you want a soft on bite boondi raita, add the boondi to the yogurt mixture and refrigerate it for at least 30 mts before serving.

  3. 3

    If you want a crisp raita, add the boondi to the yogurt mixture just before serving and mix well. Sprinkle roasted cumin powder and red chili powder.

  4. 4

    Garnish with chopped coriander leaves. Serve chilled with paratha, pulao or biryani.
