Heat your oven at 190 C. In a bowl sieve your dry ingredients together and make a well. Set aside. Whisk you eggs together with the lemon zest ready to use.

Once your honey is warm add to the dry ingredients together with the toasted almonds and the whisked egg and combine quickly before the honey cools down. If you haven't got toasted almonds, you can do this yourself by placing them on a baking tray and place in the oven for about 10 minutes.

Once the ingredients are all combined, shape into one or two rolls on baking trays lined with parchment paper and bake for 30/35 minutes. These will be soft, but if you prefer a more crunchy bite, once you sliced them, place in the oven until hardened.
