I didn't measure anything for this recipe because I just used up my left over pulled pork and the rest ingredients measured just by "feeling" 😂, adjusted to how much the pulled pork I had.

Ingredients

  1. 1day old cooked rice
  2. Left over pulled pork
  3. Garlic cloves, minced
  4. Shallots, chopped
  5. Eggs, lightly beaten
  6. Green onion, thinly sliced
  7. Salt and pepper

Cooking Instructions

  1. 1

Heat a little oil in a wok on high heat.

  2. 2

Add in the garlic and shallots. Saute until the garlic looks almost golden brown. Put aside on the edge of the wok.

  3. 3

Add a little more oil in the center of the wok.

  4. 4

Pour the beaten eggs. Scramble it.

  5. 5

When the egg looks almost set, add the cooked rice.

  6. 6

Flatten the rice out and break up any large clumps. If the rice is cold from the refrigerator, continue stir-frying until the rice is warmed up, which will take about 5 minutes.

  7. 7

Add the pulled pork. Mix everything then season with salt and pepper.

  8. 8

Have a taste. Add salt if needed.

  9. 9

Add green onion. Give more stir a couple more time then turn the heat off.

  10. 10

    Serve immediately.
