Perfect in Autumn! Light and Fluffy Apple and Black Tea Cake

This recipe is a modified version of the "Apple Fluffy Cake" shown in the TV show "Cookin' Idol Ai! Mai! Main!". I added tea leaves in my version. This cake is easy to bake so I highly recommend it.
This cake is moist and fluffy. You don't even need to beat the egg white for a long time.
Anything that goes well with apples will be tasty.
Add walnut, sweet potato or cinnamon powder,and it will be delicious.

Cut an apple in half. Peel one half and dice. Dice other half with the skin still on.

Beat the eggs and add the sugar. Whisk it until it has thickened.

Add the vegetable oil and stir lightly. Add the tea leaves from the teabag. Remove any moisture from the peeled apple dices, and add them into the mixture and mix well.

Sift in the flour and briefly stir with a rubber spatula. Pour into the cake pan, and put the unpeeled diced apples on top.

Bake in the preheated oven at 180C for 60 - 70 minutes. Insert a bamboo skewer etc. to check whether the centre is done.

This cake burns easily, so try to keep an eye on it and adjust the baking time accordingly.

If you want to enjoy a stronger black tea flavour, add some more tea leaves. (This is a photo I took previously.)
