Katta family's Kumquat jam

I unexpectedly received Kumquats as a gift! Similar to Yuzu Jam, I experimented several times and came up with this good recipe.
This is a less soured recipe. If you like more sour taste, reduce the amount of sugar and adjust the amount of lemon juice. Recipe by Kattasan

Cooking Instructions
- 1
Wash the fruits well and take the stem ends off.
- 2
Boil them and drain 2 times to reduce the bitterness. After that, eat and check the bitterness. If it's too bitter for you, boil them and drain one more time.
- 3
Cut them into half crosswise and take the seeds out. Shred the skin finely and chop the fruits roughly.
- 4
Put the skin, fruit, sugar, lemon juice and 2 table spoons of water in a pot. Simmer it and mix occasionally until the texture gets thickened.
- 5
Pack into a jar that has been sterilized in boiling water and close the lid while the jam is hot and you can keep it for a couple weeks.

Kumquat Jam Kumquat Jam
I learnt this recipe from a cooking class a long time ago, but I lost the recipe so I recreated it on my own. I think they taught us to wash the kumquats with rice bran, but I just eliminated any complicated steps.I used a 1/4 of the weight of the kumquats in sugar (if you want to preserve the jam for a long time, add more sugar). Incidentally, I always divide the jam into small batches and freeze it. I don't bother with sterilizing the jars with boiling water (since I've never had the jam go bad this way. If you are worried that it will though, sterilize the jars). Recipe by Setsubunhijiki cookpad.japan -

I received a bunch of persimmons from a friend, and when thinking of various ways to use them, I decided to make persimmon jam, since I've never had it before. After searching different recipes on the internet, I came up with my own version.Persimmons are more tart than apples, so it only need a little sugar. You can use either firm or ripened persimmons, so give this recipe a try when you have lots. You could also grate or put them in a food processor for a smoother texture. Simple Persimmon Jam Simple Persimmon Jam
I wanted to make a jam because some persimmons I had received became too soft.If you use persimmons that aren't overripe, slice them thinly and let them sit for an hour after mixing with the sugar to make syrup. You do not need to add the 50 ml of water if you do it this way (you can add the water if not enough syrup formed). I used 25% as much sugar as the persimmons. Please adjust this amount to your taste. Recipe by ankobby cookpad.japan -
Authentic Clementine Jam Authentic Clementine Jam
We received clementines as a gift, but they were rather sour. I turned some of them into jam before they went bad.The final simmering over medium heat is to evaporate the moisture. Stop cooking when it is nicely thickened. Be careful not to let it burn. This recipe is good for rather sour oranges. For sweet oranges, use less than 100 g of sugar. If you don't use granulated sugar, it may end up too sweet. Recipe by Rugyaraga- cookpad.japan -
