Apparently gherkins on pizza are the latest food trend! I don’t actually know why it has taken so long for this to be a thing 🥒😋😂 I added pineapple, a few pickled chillies and it didn’t have any cheese - for a little extra controversy 🙊 It proved to be a rather tasty working lunch 🙌

I ball of homemade pizza dough (see recipe)
5 tablespoonscrushed tomatoes or homemade pizza sauce (see recipe)
5 gherkins
1small tin of pineapple
5 pickled chillies
1small onion or pink pickles (see recipe)
1sprinkle of dried Italian herbs 🌿
1 sprinkle of vegan Parmesan (see recipe) optional
1drizzle of chilli and/or garlic oil

Place the pizza dough on a baking tray and top with the tomato base.

Tip with vegetable, pineapple and pickle toppings of your choice. Top with Italian herbs and a little vegan Parmesan (if using) and bake in a hot oven until crispy.

Drizzle with chilli or garlic oil to serve.
