Prepare and cut the pork chops into serving-sized pieces. Soak the meat in water with 2 tablespoons of salt to draw out the blood and make the meat whiter. Rinse the meat several times until the water runs clear, then rinse one more time and drain. Marinate all the pork with the seasonings listed above. Let it marinate for 2 to 4 hours, or overnight for best flavor.

If using a charcoal grill: just place the meat on and grill. If the color isn’t appealing, brush on more honey to give the pork a nice glaze, or dip it back into the marinade for a shiny, even color.

If using an oven: for the first round, arrange the pork evenly on a rack and bake at 350°F (about 175°C) for 20 minutes. For the second round, brush more honey on top and bake for 5 minutes on each side to enhance the color. NOTE: Oven temperatures may vary, so adjust as needed at this step.

If using an air fryer: preheat the fryer and add the pork. For the first round, cook at 300°F (about 150°C) for 7 minutes. For the second round, flip the pork and cook at the same temperature and time.

For scallion oil: wash and chop the green onions, then place them in a bowl. Heat oil until hot, then pour it over the green onions and sprinkle with a little salt. Ready to serve.

For the dipping fish sauce: mix in a 1:1:1 ratio. For example, 1 part sugar, 1 part fish sauce, 1 part water, and 1 part fresh lime juice. Heat the mixture, let it cool, then add minced garlic and chili. Ready to serve.

For the best experience, eat right away in a bowl. No need to say more! If you like it, great—if not, that’s okay. But I recommend using a bowl.
