Coffee Jelly

I adapted a recipe I saw in a book to use instant coffee, and added a little sugar.
If you have granulated sugar, use that instead of regular white sugar. I think it gives a slightly more refined sweetness.
As I wrote in the introduction, I added a lot of gelatin to make it the consistency I like, so you can use less if you prefer. Recipe by Shoutaboo

This is the gelatin I used.

Soften the gelatin in 3 tablespoons of water (not listed). You just need to do this for a short time.

Put all the water in a pan and bring to a boil. Add the softened gelatin from Step 2 in 2 batches.

I used a rubber spatula this time, but you can use anything to stir the liquid well.

Add the instant coffee granules and sugar all at once. Mix some more, then turn off the heat and leave to cool.

Pour the liquid into molds, and chill until set in the refrigerator. Add some whipped cream to taste.
