Season the chicken and cook it in a skillet, stirring for a few minutes. Add the onions and stir, then add the tomatoes, green bell peppers, vinegar, and tahini. Cook over medium heat for 10 minutes, stirring occasionally.

In a bowl, combine the flour, boiling water, and salt. Knead until you have a soft dough. Divide the dough into small balls, then roll each ball out until it's as thin as shown in the picture. Cook each flatbread in a skillet on both sides until done.

Lay out the saj bread, fill it with the chicken mixture, and roll it up. Enjoy!

You can serve this with French fries, pickled cucumbers, and garlic sauce.

Note: Be sure to cover the saj bread with a damp towel to keep it soft.
