Mix Vegetables Curry

Wash and cut all vegetables in medium size pieces.
In a grinding jar add mustard seeds, poppy seeds, coriander seeds, green chilli, black pepper and make a fine paste by adding water. - 2
Heat oil in a thick bottomed kadhai/pan splitter panchforan, add cauliflower cook for 2 minutes in medium - high flame then add potato, carrots, onions and beans. Cover and cook for another 5 minutes. Stir often.

Add ginger-garlic paste and turmeric powder mix everything well. Keep flame on low. Cover and cook for anoter few minutes, stir often.

Now add all remaining chopped vegetables and salt. Cover and cook. When vegetables get soft add spices paste that we prepared earlier mix everything together.cook for another 5-8 minutes in medium flame. Stir often.

Add 1 & 1/2 cup water. When its start boiling Cover and cook gor another 2-3 minutes. Turn off flame. Garnished with chopped coriander leaves.

Serve hot with rice, chapati, puri or paratha.
