When I couldn't get any Japanese grain vinegar, I made my own sushi vinegar using vinegar available abroad.

The amount of vinegar is modest, since white vinegar is more acidic than rice vinegar. Dissolving sugar and salt into the vinegar after it has been brought to a boil gives a mellow flavor. Recipe by MatM

Ingredients

  1. 540 mlRice
  2. 590 mlWater
  3. Sushi vinegar:
  4. 60 mlWhite vinegar
  5. 2 tbspSugar
  6. 1heaping teaspoon Salt

Steps

  1. 1

    From the 540 ml (450 g / 1 pound) of uncooked rice and 590 ml (2.5 cups) of water, you will get about 1 kg / 2 pounds of cooked rice. The amount of the vinegar, sugar and salt is for the two pounds of cooked rice.

  2. 2

    In a pan, bring white vinegar, sugar, and salt to a boil, dissolving the crystals, then cool.

  3. 3

    When using a microwave: Put the ingredients in a heat-resistant dish, and cook for about 1 minute, then cool. It should be hot enough to dissolve the sugar and salt crystals.

  4. 4

    Cook rice to "al dente" firmness.

    Once the rice is done, mix in the sushi vinegar while the rice is still hot. Fold in the vinegar to avoid crushing the rice grains.

    When using Japanese rice vinegar, use 80 ml vinegar. The amount of sugar and salt should remain the same.
