Thaw puff pastry.

Whisk together sugar and egg yolk in a bowl until pale in color. Add cornstarch and whisk well. Add vanilla extract and milk and whisk until combined.

Whisk custard in pan over medium heat until thick.

Cover with plastic wrap and chill for 30 min.

Cut thawed puff pastry into equal sized rectangles and pierce with a fork.

Heat a nonstick pan over low heat and cook for 10 minutes. Flip and put a lid on top of the pan. Cook for another 10 min.

Remove lid and sprinkle powdered sugar on the puff pastry. Flip so sugared side is on the bottom.

Bring heat up to high. Place a piece of parchment paper on the puff pastry and weigh it down with another pan. Once the surface is caramelized, about 1-2 min, remove from the heat and let cool.

Place custard in piping bag. Pipe chilled custard on puff pastry and top with sliced strawberries. Pipe another row of custard then top with another sheet of puff pastry, custard, strawberries and remaining puff pastry.

Dust top with powdered sugar and serve.
