Easy Homemade Mango Sticky Rice (Using Rice Cooker)

Actually I have shared and posted the mango sticky rice recipe some time ago, but in a different version. In my previous sticky rice recipe, I cooked it using a steamer, and I had to soak the sticky rice in water for at least 2 hours before cooking it. The time is longer than I expected. This time I will share again the Thai mango sticky rice dessert in the easiest way. Instead of cooking and steaming it into a steamer, I will just cook it in a rice cooker. It's much faster and I don't need to soak the glutinous rice first. Just cook it like the way we cook the regular rice. And also to make coconut cream sauce, I use the microwave instead of boiling it on the stove. Sounds easy right ???? So let's get straight to the recipe.

Put the glutinous rice into the rice cooker. Add 1 cup water. Make sure the rice cover with the water.

Closed the rice cooker and switch to cook. After it stops cooking, let it stay on “warm”

Then you can start make the coconut cream sauce. Add the coconut milk into bowl (microwave safe), add sugar, and salt. Microwave it for 2 minute. Take off then stirring well until the sugar dissolves.

Pour 1/2 - 1 cup the coconut milk mixture into rice cooker. Stir quickly to mix. Then switch the rice cooker on “cook” again. When it stops, and the rice is done (I like to keep it warm)

Now in a small bowl combine he cornstarch and water. Then pour into coconut milk. Take it to the microwave. And microwave every 30 seconds, remove and stir until the mixture becomes slightly thick (about 2 minutes)

To serve, transfer the sticky rice into serving plate or bowl. Peel and slice the mango as you desire place the sliced mango on the top or side of the rice, then pour few spoonful of the coconut cream sauce over the rice. Enjoy!
