In a stand mixer, combine the flours with the sourdough starter (you can skip the starter if you prefer). Mix, then add the yeast dissolved in water and sugar, along with the yogurt. Mix until combined. Add the lard and mix well. Once a dough ball forms, add the salt and incorporate thoroughly. This should take about 3 to 4 minutes. Grease a bowl, place the dough ball inside, cover with plastic wrap, and let rise until doubled in size.

Divide the dough in half. Grease a baking pan. Roll out the dough with a rolling pin and place one half on the bottom of the pan. Add the filling, then cover completely with the other half of the dough. Cover with plastic wrap and let rise for another 3 hours.

Preheat the oven to 350°F (180°C) and bake for 30 minutes. Remove from the oven and enjoy your focaccia warm.
