Ingredients

40 minutes plus rising time
Serves 7 to 8 servings
  1. 2 1/2 cupsbread flour (about 300 grams)
  2. 1 2/3 cupsall-purpose flour (about 200 grams)
  3. 7/8 cupwater (210 ml)
  4. 2 1/2 teaspoonsactive dry yeast (about 10 grams)
  5. 1 teaspoonsugar
  6. 1 packetsourdough starter*
  7. 3 tablespoonslard (about 40 grams)
  8. 2 teaspoonssalt (about 10 grams)
  9. 1/3 cupplain yogurt (about 80 ml)
  10. For the filling
  11. 2 slicescooked ham
  12. 3 1/2 ouncesfontina cheese, cut into pieces (about 100 grams)
  13. 1 1/2 ouncesgrated cheese (about 40 grams)
  14. 8 3/4 ouncescooked greens (about 250 grams)

Steps

40 minutes plus rising time
  1. 1

    In a stand mixer, combine the flours with the sourdough starter (you can skip the starter if you prefer). Mix, then add the yeast dissolved in water and sugar, along with the yogurt. Mix until combined. Add the lard and mix well. Once a dough ball forms, add the salt and incorporate thoroughly. This should take about 3 to 4 minutes. Grease a bowl, place the dough ball inside, cover with plastic wrap, and let rise until doubled in size.

    Divide the dough in half. Grease a baking pan. Roll out the dough with a rolling pin and place one half on the bottom of the pan. Add the filling, then cover completely with the other half of the dough. Cover with plastic wrap and let rise for another 3 hours.

    Preheat the oven to 350°F (180°C) and bake for 30 minutes. Remove from the oven and enjoy your focaccia warm.
