Taiwanese Braised Beef Noodle Soup with Homemade Noodles

Beef noodle soup is an authentic Taiwanese delicacy. Every time I return to Taiwan, I feel satisfied only after having a bowl of beef noodle soup. What to do when you miss the taste of Taiwan abroad? You have to cook it yourself. After several attempts, this version suits my taste. The slightly spicy and rich broth, tender beef, and chewy homemade noodles are delicious. I hope you like it too. 😊

[Beef Broth] Ingredients
For the beef, you can use shank, brisket, etc., according to personal preference. I used beef leg meat.

Slice the onion, cut the tomato into chunks, cut the green onions into sections, slice the garlic and ginger, and cut the beef into chunks.

Prepare a pot of at least 3 liters. Heat the pot on high, then add the green onions, ginger, and garlic to sauté until fragrant.

Add the beef to the pot and stir-fry until the beef is browned. Remove the meat and aromatics and set aside.

Add the onion to the pot and sauté until fragrant. Add soy sauce, sugar, and bean paste, and stir well. Add rice wine, black peppercorns, star anise, and bay leaves, and stir briefly.

Add the beef and tomato to the pot and stir well.

Pour in water to cover the ingredients. Bring to a boil on high heat, then cover with a lid. Reduce to low heat and simmer for 1 hour. After 1 hour, turn off the heat and let it sit for about half an hour.

[Homemade Noodles] Ingredients
While the beef broth is simmering, let's make the homemade noodles. (This takes about 30 minutes) Of course, you can also use store-bought noodles and skip the homemade noodle steps. - 9
The homemade noodle ingredients are for 4 servings. If you need to make 6 servings, multiply the amounts by 1.5. (I always make and cook them fresh)
Add flour, water, and salt to a mixing bowl and mix well. Knead until the dough is smooth and the bowl and hands are clean. Cover with a damp cloth to prevent drying and let it rest for 15 minutes.
Tip: If the dough is too dry or too wet, adjust by adding a little more water or flour.

Divide the dough into 4 equal parts and roll each into a ball. Each small dough ball is about one serving.

Take one dough ball and roll it into a long strip about 2mm thick. Sprinkle some flour to prevent sticking during the process.

Fold the dough several times, then cut into strips and unfold to make noodles. Sprinkle some flour occasionally to prevent sticking. Set the cut noodles aside.

Chop some green onions to use as a garnish once the beef noodle soup is ready.

Remove the aromatics from the cooked beef broth. If you don't like the texture of soft vegetables, you can also remove them, leaving only the meat and broth.

Boil a pot of water. Once boiling, add the noodles and cook for 3-4 minutes. Homemade noodles cook quickly. If using store-bought noodles, follow the cooking time on the package.

Once the noodles are cooked, add them to the beef broth and sprinkle some chopped green onions for garnish.
